Coffee of the Month: Discover Mexico's Finca Las Chicharras
Mexico has quietly become one of the world's most exciting origins for specialty coffee, and this month we're excited to introduce a coffee that showcases exactly why. Our August Coffee of the Month comes from Finca Las Chicharras in the mountains of Chiapas, where rich volcanic soils, cool mountain air, and generations of coffee-growing experience come together to produce an incredibly balanced cup.
Why Chiapas?
When people think of coffee-producing countries, places like Colombia, Ethiopia, or Guatemala often come to mind first. Yet Chiapas, located in southern Mexico near the Guatemalan border, produces some of the country's highest-quality coffees.
The region's high elevations, abundant rainfall, and natural shade create ideal growing conditions for slow-ripening coffee cherries. That extra time on the tree allows sugars to develop, creating coffees that are naturally sweeter and more complex.
A Coffee That Gives Back
Finca Las Chicharras is owned by E-Café Chiapas, an organization that believes great coffee begins with thriving communities. In addition to producing exceptional coffee, they invest in educational opportunities, agricultural research, producer training, affordable financing, and community infrastructure. Their work helps farmers improve both coffee quality and long-term sustainability. It's exactly the kind of partnership we look for when sourcing coffee at Common Good Coffee.
What You'll Taste
One of the reasons we fell in love with this coffee is its incredible balance. Instead of bold fruit or heavy chocolate flavors, this coffee offers subtle elegance. Expect notes of:
• Honey
• Black Tea
• Sweet Citrus
The result is a cup that's bright without being sour, sweet without being heavy, and complex without feeling intimidating. It's a coffee that appeals equally to seasoned coffee enthusiasts and people simply looking for an exceptional morning cup.
Best Brewing Methods
This coffee performs beautifully in nearly every brewing method. Our favorites include:
- Pour Over (V60 or Kalita)
- Automatic Drip Brewer
- Chemex
- Espresso
- Cold Brew
The medium roast allows each brewing method to highlight different aspects of the coffee while maintaining its clean finish.
Why We Selected It
At Common Good Coffee, we don't simply look for coffees with impressive cupping scores. We look for coffees with a story worth sharing.
Finca Las Chicharras represents craftsmanship, sustainability, and community investment while delivering a cup that's approachable enough to enjoy every day.
We hope you'll enjoy it as much as we do. Pick up a bag online while this limited coffee is available.
